Sauteed Broccoli with Lemon
A light, uplifting and refreshing way to serve broccoli or other greens, perfect for lively, spring weather.

Ingredients:

3 heads broccoli washed and cut into small florets (dice the stems)
1-2 tablespoons olive oil
1/2-1 teaspoon sea salt
Juice of 1 lemon
1/2 cup water
Other green such as watercress, kale, collards or broccoli rabe can be used instead of broccoli

Utensils: Skillet with lid

Preparation:

Warm a skillet on a medium flame.
Add the olive oil and turn the flame to high.
Add the broccoli and sea salt.
Saute the broccoli until they are coated in oil. About 1-2 minutes.
Add the water and cover with a lid. Steam for another 2 minutes.
Remove the lid and add the lemon juice. Mix gently and serve.
