Scrumptious Oatmeal Cookies
Oatmeal CookiesCookies are a fantastic, fun activity to do with your children. Here are some that are delicious and healthy too. Even little folk can help with gathering the ingredients, mixing and placing the dough on the cookie sheets. Happy cooking!!

Serves: 8 people
Preparation time:
Utensils: Cookie sheets, blender, mixing bowl, cooling rack

Ingredients:

1/2 cup corn oil
1 cup barley malt
1/2 cup tahini
1/2 cup apple juice
1/2 teaspoon sea salt
1 cup whole-wheat pastry flour
3 cups oatmeal
1 teaspoon cinnamon
1 cup raisins

Preparation:

  • Pre-heat the oven at 350 degrees. Oil the cookie sheets. Combine the first four ingredients in a blender and blend to a smooth consistency.
  • Place all the dry ingredients in a bowl and gently mix together. Gently add in the blended ingredients.
  • Fold in the raisins. Let the batter sit for about 15 minutes.
  • Place a tablespoon, at a time, of the mixture on to the cookie sheets. Flatten gently. Bake for about 15 minutes or until golden brown.
  • Remove and let the cookies cool for 5 minutes before removing to a rack.
  • Let cool completely before serving.
